The art of baking was developed early during the Roman Empire around 300 BC as Romans loved baked goods and demanded for them frequently for important occasions such as feasts and weddings etc. It was then that baking was introduced as an occupation and respectable profession.

 

Coming from a traditional Kutchi family, my relationship with bread revolved around mundane pick ups for breakfast toasts, sandwich dinners or the popular pav bhaji. It was only when I visited the real bakeries I found similarities between loving and baking - how each fills you with love, only when you give it time and attention. Mumbai boasts of a long bakery list and before the new genre of bakeries exploded our brains with its sweetness, the older bakeries still thrive to survive through its loyal patrons. This is to pay a tribute to them.
